Eat 2 Explore Italy- Chicken Milanese

The Chicken Milanese was a bright, colorful and hearty dish that has an equally rich history, dating back to almost nine hundred years ago. I thoroughly enjoyed this well-rounded dish. 
This meal paired succulent, tender breaded chicken, a hearty root vegetable side, and a fresh arugula salad. The chicken was coated with egg and flour, to stick on garlicky bread crumbs and preserve moisture. The bread crumbs came in the Eat 2 Explore box, and they were a wonderful addition, well seasoned and blending well with the side dishes. 
Sweet potatoes, potatoes and onions combined in the side- I was surprised at how well the sweet, buttery, and silky sweet potatoes paired with the hearty, classic blend of potatoes and onions, but the caramelization of the onions tied the two together and made it a delicious meal, especially sprinkled with the Rosie Mix in the box. 
Lastly was the arugula salad. Shallots, onion and balsamic vinegar mix (included in the box) dressed the frilly leaves, and added a nice pop of acidity to the dish. 

A slice of lemon was all that was needed to tie together these three components and make a delicious, herbaceous and vibrant meal.
